Butterfish with butternut squash mash

Ingredients:
Butterfish
Butternut Squash mash
Medium Intensity Extra Virgin Olive Oil
Garlic
Bay Leaf
Thyme
Tomatoes
Baby Basil
Sprout of sunflower Seeds
Salt
Lemon
How to cook it:
- Infuse the olive oil with garlic, bay leaf, sprigs of thyme and heat low for 5 minutes.
- Cut the butterfish in cubes and cook it slowly for 5 minutes, completly covered by the olive oil.
- To assemble the dish add butternut squash mash and two dice of butterfish. Add some tomatoes, baby basil and a sprout of sunflower seeds that no only add color and flavor, but also fragance.
- Finish this dish with a touch of salt, lemon zest and a trickle of olive oil.
- Enjoy!
